"Mobile Food Units" is a category that includes:
Examples: packaged ice cream, packaged cotton candy, packaged chicharones, hot dogs, panini grilled sandwiches, shaved ice, scooped ice cream, beverage service, and nut roasting.
Roadside Vendors
Commercially processed and packaged-frozen raw foods, sold in its original packaging.
Examples: Frozen Steaks, Frozen Poultry.
Limited Package Mobile Food Units
Commercially-processed packaged food in its original package.
Examples: packaged ice cream, single-serving size packaged snacks, plate lunches wrapped at a commissary, and limited package trucks.
Full Service Mobile Food Unit
Unpackaged foods, preparation for same day service, reheating of a commercially processed food item, and food preparation with no cook step.
Examples: (i.e. Kitchen on wheels) pulled pork, sushi, chicken salad made from shredded chicken, undercooked animal proteins and more.
All mobile food units (MFU's) shall operate from a Central Preparation Facility (CPF), commonly termed as a "commissary", and shall report to such location daily for supplies and for cleaning and servicing operations. Each central preparation facility must contain a servicing area and shall be a fixed establishment – not a temporary establishment, nor a mobile type establishment.
A copy of the current permit and most recent inspection report for the Central Preparation Facility and Servicing Area that will be used by the MFU must be provided to the Environmental Health Department, along with the MFU application.
