Thanksgiving is a time to gather, give thanks, and enjoy a perfectly cooked turkey surrounded by friends and family. But before you carve into that centerpiece, make sure your meal is as safe as it is delicious! Foodborne illnesses can easily turn a joyful holiday into a painful one — and most are preventable with proper food handling and cooking practices.
Always thaw your turkey in the refrigerator, never on the counter. Place it on the bottom shelf to prevent raw juices from dripping onto other foods.
Avoid using hot water to thaw — it can bring the turkey’s surface into the “danger zone” (40–140°F), where bacteria multiply quickly.

Use a food thermometer to make sure your turkey reaches a minimum internal temperature of 165°F in the thickest part of the breast, the innermost part of the thigh, and the stuffing (if inside the bird).
Wash your hands with soap and warm water for at least 20 seconds before and after handling raw poultry. Clean and sanitize all utensils, cutting boards, and countertops that have come in contact with raw turkey.
